Alfredo Sauce....Vegan Magic

Fridays are my favourite days. Not only because they are the last day before the weekend but because they are the day that I begin my peaceful escape. Come 4 o'clock on Friday afternoon, my mind leaves the reality of my current life and lives the life that I hope for in the future. A life where I work as a nutritional counsellor, working with people to improve their health and their lives. Having people share their vulnerability with me, so that we can work together in getting to the ROOT of the cause. (A little business name insight for you) Not to mention eating delicious foods so that I can add recipes to this blog! So without further ado, let's get to the reason we are all here.

Alfredo Sauce

  • 1/2 cup Cashews

  • 1 cup Oat Milk

  • 1 Tbsp Coconut Oil

  • 1 Tbsp Lemon Juice

  • 1/2 Tbsp Tapioca Starch (or Sub Corn Starch)

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1/4 tsp Garlic Powder

  • 1/8 tsp Onion Powder

Now for anyone who is into quick and easy recipes....this one's for you. The longest step in this recipe is letting the cashews soak. Which requires a minimum of two hours or you can start the soak before you leave to work in the morning and they will be perfect when you get home. Place cashews in a a bowl of warm water, let sit for a minimum of 2 hours. Once the cashews are ready, combine all ingredients in a high powered blender. Blend until smooth. Poor blender contents into a medium sauce pan. Over medium heat, stir sauce until it begins to thicken. About 5 minutes. Remove from heat and add pepper and salt to suit your taste. And that is seriously it! Vegan Alfredo Sauce that is great on pasta or as a dip. Drizzle it over veggies or store it in the fridge, covered for up to 5 days.
