Banana Bread......There's chocolate on it

What a crazy week it has been. A lot has happened. One of the most exciting being the local, Fort McMurray launch of my small batch vegan cheeze sales. I must admit I was slightly overwhelmed by the response but also so so so thrilled. This was not a direction I had originally envisioned for UpRooted Health but sometimes the best outcomes aren't planned.

Unlike this Banana Bread. Which definitely was planned and has been recipe tested a few times....for "quality assurance." There are two important items that make this recipe simple. The first one is completely necessary and that is VERY ripe bananas. The sugar has been cut way back on this recipe, so to ensure a sweet and delicious banana taste, ensure that they are RIPE. The second important (but not necessary) item is a high power blender. We are going to add all of the wet ingredients to the blender, saving time on mashing and mixing. If you don't have a blender, there is nothing wrong with the old fashioned way!

Banana Bread

5 Large Very Ripe Bananas

1/2 Cup Vegan Butter

1/2 Cup Sugar*

1/4 Cup Oat Milk

1 TBSP Molasses*

1 Chia Egg

1 Flax Egg

2 tsp Vanilla

1 tsp Apple Cider Vinegar

2 Cups Flour

1 tsp Baking Soda

1/2 tsp Salt

1 Cup Vegan Chocolate Chips

Preheat oven to 350'f. The first step is to prepare the flax and chia eggs. In a small bowl combine 1 TBSP of Flax Seeds with 1 TBSP of Chia Seeds. These can be ground or whole. Add 4 TBSP of warm water, give a quick stir and set aside. Now, with 1 tsp of oil, evenly oil your bread pan. Coat the oiled pan thinly with 2 tsp of flour. This will ensure your bread comes out easily. In a high powered blender or mixing bowl, combine all other ingredients on the list down to an including Apple Cider Vinegar. (Remember, do not include the flax/chia eggs, leave them aside in their bowl). Blend until smooth. Give the eggs another quick stir. In a mixing bowl, combine the flour, salt and baking soda. Now the egg mixture should be quite gelatinous and ready to go. Pour egg mixture and wet mixture into dry ingredients. Mix until well combined. Fold in 3/4 cup of chocolate chips. Pour banana bread mixture into the oiled and floured pan. Sprinkle remaining 1/4 cup of chocolate chips over the top. Bake for 50 minutes. Once baked, allow to cool in the pan for at least 30 minutes. Slice, enjoy and maybe share it with others.

* If you prefer, you can use 1/2 cup of brown sugar instead of sugar and molasses.
