Fluffy Pancakes...Sunday's Best Friend

It has been a while since I shared a recipe.....I am sorry for the absence! Things have been a bit crazy but we are getting back on track. This recipe has been years in the I have always enjoyed the idea of pancakes more so than the actual pancakes. And my husband doesn't even enjoy the idea of them that much! But, when I made these for him today, he said the words, "you need to post these!" So here we are.....Ready to post.

Fluffy Pancakes

  • 1 Cup All Purpose Flour

  • 1 TBSP Baking Powder

  • 2 TBSP Sugar (Optional)

  • 1/4 tsp Salt

  • 1 Cup Oat Milk

  • 2 TBSP Melted Plant Based Butter

  • 1.5 TBSP Apple Cider Vinegar

  • 1.5 tsp Vanilla Extract

In a small bowl, combine oat milk, or other plant based milk, with apple cider vinegar. In a large bowl, mix together all dry ingredients. If you are following a low or reduced sugar diet, these are excellent even without the sugar. Add milk mixture and all other wet ingredients to the dry ingredients. Mix until combined. Heat a non-stick or lightly oiled pan over medium heat. Add 1/4 cup of pancake mixture to the pan. Allow to cook until bubbles form over the entire top side of the pan cake, flip and cook second side until golden brown. Serve topped with berries, chocolate chips or your other favourite toppings!
